The olives in the area surrounding the Umbrian town of Trevi enjoy a habitat that is unparalleled in Italy, for both the land, with its calcareous substratum, and the microclimate in which they grow. Despite the high costs involved, the olives are handpicked right from the tree because it is the best way to assure their perfect condition. These olives come from the Moraiolo, Frantoio and Leccino varieties and are processed no later than 24 hours after harvest to avoid possible fermentation and a rise in the acidity level. The oil is extracted by natural cold-dripping "Sinolea" process, which does not entail any applied pressure, heat or chemical solvents. Following the traditions of the ancient Hypogeum oil mills, the oil is then stored in an underground room in order to preserve its distinct emerald green color and unsurpassed fragrance.

The origin of this oil is guaranteed and OLIO TREVI was the first oil in Umbria to obtain the D.O.P. (Protected Denomination of Origin) mark. The code printed on the back of each bottle serves to identify the grower whose olives were used in the making of Olio Trevi DOP.

| In 1968, several farseeing olive growers from Trevi decided to go beyond their family-based production, which was no longer profitable, and form a company. Thus, a cooperative was established and it soon grew to include 84 olive growers. . In order to satisfy the growing needs of the market, the olive growers established the "Società Agricola Trevi “Il Frantoio” S.r.l. " in 1985, and this is the only distributor of “Trevi oil” sold directly to consumers and to Italy’s finest restaurants. In 1994, it became the first oil company in the world to obtain ISO 9002 Quality Certification. In 1998, the company inaugurated the new oil mill at its new headquarters in Matigge di Trevi. In 1999, the Parco Tecnologico Agroalimentare dell’Umbria granted the company the first certificate issued in Umbria to indicate that the oil it produces complies with the sensory and analytical values established by the Production Standards for D.O.P. UMBRIA - ASSISI-SPOLETO HILLS (Protected Designation of Origin). The fact that the oil comes from Umbria is guaranteed by an alphanumeric code printed on the bottle, which traces the specific producer of the Umbrian olives. |
