Grapes: autochthonous grapes Etna (carricante, catarratto, Minnella biamca, gracanico)
Production area: vineyards on the northern slope of Etna, volcanic soil, stony, dry, draining and rich in minerals. Contrada Calderara City of Randazzo 650 meters above sea level.
Vineyards: counter high plant density
Yield per hectare: 50 quintals
Vinification: soft pressing of the grapes, fermentation at controlled temperature.
Colour: pale yellow
Bouquet: gentle but firm notes of citrus and ripe yellow fruit, bitter almond, apple and hawthorn
Taste: Fresh, delicate yet intense, dry, pleasantly sour
Serving suggestion: white meat, fish and shellfish, seasoned cheeses, perfect to serve also as an aperitif
Serving temperature: 12 degrees
Alcohol content: 12.5 to 13% vol
