VINIFICATION The pressed cooled to 8-10 °C , is left to macerate for 4-6 hours before pressing. The must obtained is kept cold at 10° C, left to decant for 3 days and then poured off.
ALCOHOLIC FERMENTATION The must clear selected yeasts are added to activate the fermentation that takes place for the first phase, up to 4-5% alcohol played in fermentation in stainless steel at controlled temperatures, never above 16° C, to complete and then in barriques and tonneaux.
