The vineyards are at an altitude of around 300 metres, about 15 years old, and are all situated within the DOC wine production area of Assisi. The soil is mainly shallow, of medium consistency,  with a high level of skeletal deposits deriving from the dissolving of the calcareous rock of Mount Subasio.

The harvesting of Grechetto, which is used for this wine, started in mid-September, with slightly more overripe grapes than usual.

The grapes were placed to dry in small trays in a thermo-controlled environment for approximately two months, until the required sugar content was reached.

The grapes are then pressed and allowed to macerate at a temperature of 4°C for about 6 hours.

Vinification: alcoholic fermentation occurs in stainless steel containers at a controlled temperature until the required alcohol content and consequent residual sugar level are reached.

There is then a period of approximately two years’ ageing in third passage barrique.

Tasting notes: from the first tasting notes, the wine’s intense yellow colour with bright golden reflections stands out. Sweet honey hints to the nose, with vanilla and candid fruits, and a decisive mineral finish, typical of Grechetto.

The Sportoletti family, who have been farmers for generations, have always been passionately dedicated to wine production. Towards the end of the 1970s, the brothers Ernesto and Remo, reaping the benefits of what their father Vittorio taught them, decided to dedicate themselves exclusively to wine production. In 1979 the first one thousand bottles were produced with their own label. Since then they have constantly been researching the perfect balance between innovation and tradition, using their skills to take the best advantage of the potential of the land-the hills between Spello and Assisi- where their 30 hectares of vineyard are situated. At present, five different  wines are produced: Assisi Rosso DOC, Assisi Grechetto DOC, Villa Fidelia Bianco IGT, Villa Fidelia Rosso IGT e Villa Fidelia Passito IGT. Over  the past ten years production has been stable at approximately  200,000 bottles per year. Since 1998 the company has had the excellent advice of the enologist and agronomist Riccardo Cotarella. On the borders of the national park of Monte Subasio, at about 500 metres above sea level, the company has approximately 2000 Moraiolo olive trees, the fruit of which produces an excellent Organic Extra virgin Olive Oil.
