The town is situated at the extreme edge of the Sorrentine Peninsula between the Gulf of Salerno and the Gulf of Naples overlooking the island of Capri. The farm “Il Convento” is situated 150 metres above sea level. It takes its name from the adjacent convent dating back from the 1300’s and belonging to the religious order of the Frati Minimi the friars took the vow of poverty, and were able to combine their love of the land and nature.
The lemons are washed then using the special equipment they zest the skins very
finely. The peel is then put into a steel container with pure spirit to rest for 8/10 days, this is then sieved and goes into a tank at a controlled temperature to preserve the organoleptic properties, cane sugar is dissolved with water and added to the
infusion, the alcohol proof is controlled and the mixture is transfered through a filtered pump ready to be bottled
