VINIFICATION AND REFINING

Production 7,300 kg of grapes per hectare.
Vinification The grapes are first cooled and then pressed very softly. The grapes yield in must is 62%.
Fermentation In stainless steel vats at 14°-16°C (57°-61°F) for 18 days. 10% of the must was fermented in new French oak.
Refining Five months in stainless steel vats, then 6 months in bottle before release.
