The Cervaro della Sala
It has a bright yellow color, with greenish tones. Despite the hot vintage, thanks to a slightly early harvest, it maintains the freshness and flavor typical of its Mediterranean style. It gives the nose sensations of chamomile, flint and exotic fruits. On the palate, mineral notes stand out that blend elegantly with vanilla and buttery notes.
Pasta with red prawns, lobster with butter, chicken rollé with cheese and mushrooms, baked guinea fowl with potatoes and, last but not least, with delicious noodles with scallops.
Montefalco Sagrantino docg
Obtained exclusively from Sagrantino grapes.
The grapes selected and harvested in boxes are taken to the cellar where they are destemmed and lightly pressed.
The maceration period is about 20 days and after pressing the wine goes into barriques where it rests for at least 18 months.
Pairings: red meats, game, aged cheeses
Extremely long-lived wine thanks to the massive presence of tannins and excellent structure, it has a ruby red color with garnet reflections, a scent of blackberries and tobacco, on the palate it is decisive and full, leaving in the end a feeling of cleanliness by drying the mouth thanks to the tannic charge that distinguishes it.
Montefalco Rosso doc
Wine made from 70% Sangiovese, 15% Merlot, 15% Sagrantino grapes. The Sangiovese and Merlot are harvested in the second half of September, while the Sagrantino is harvested later around the middle of October and then assembled.
The maceration period is about 2 weeks and after racking the wine is placed in barriques where it remains for about 12 months.
It has an intense ruby red color with aromas of red fruit, a hint of tobacco and spices, full in the mouth, of medium structure with a velvety tannin that make it ideal for different combinations.
