Flaminio Fruttato Olive oil (Fruity)
Produced by cold extraction from olives harvested by hand at the beginning of November and pressed within 12 hours.
Characterised by its fresh olives flavour and its fragrance of freshly harvested olives in the first stages of ripening, Flaminio Fruttato Olive Oil (Fruity ) is a full-bodied and decisive aromatic olive oil that is pleasantly spicy with a slight bitter aftertaste.
Due to its high level of polyphenols, which are excellent for counteracting cellular ageing, it is essential for maintaining a healthy diet.
HARVESTING SEASON: End of October – beginning of November.
CULTIVAR: Moraiolo, Leccino, Frantoio.
EXTRACTION SYSTEM: Continuous, two-and-a-half-phase cycle extracted cold within 12 hours of harvesting.
APPEARANCE OF THE OLIVE OIL: Clear.
COLOUR: Emerald green.
FRAGRANCE: Fruity, like fresh olives.
FLAVOUR: Characteristic taste of fresh and fragrant olives, full-bodied and pleasantly spicy.
DENSITY: Medium.

The olives in the area surrounding the Umbrian town of Trevi enjoy a habitat that is unparalleled in Italy, for both the land, with its calcareous substratum, and the microclimate in which they grow. Despite the high costs involved, the olives are handpicked right from the tree because it is the best way to assure their perfect condition. These olives come from the Moraiolo, Frantoio and Leccino varieties and are processed no later than 24 hours after harvest to avoid possible fermentation and a rise in the acidity level. The oil is extracted by natural cold-dripping "Sinolea" process, which does not entail any applied pressure, heat or chemical solvents. Following the traditions of the ancient Hypogeum oil mills, the oil is then stored in an underground room in order to preserve its distinct emerald green color and unsurpassed fragrance. A truly genuine product of exceptional quality. The origin of this oil is guaranteed and OLIO TREVI was the first oil in Umbria to obtain the D.O.P. (Protected Denomination of Origin) mark. The code printed on the back of each bottle serves to identify the grower whose olives were used in the making of Olio Trevi DOP.
