Terroir Details
Cultivated at an altitude between 250 and 700 meters above sea level, with north-south exposure, the terroir offers ideal conditions for growing grapes. The density of the vines, 4,500 per hectare, along with the spurred cordon and guyot training systems, contributes to the richness and balance of the harvest.
Vinification and Aging
With a yield limited to 50 quintals per hectare, harvesting takes place in mid-September by hand picking in boxes. Fermentation takes place at a controlled temperature not exceeding 18°C for about 20 days, preserving the aromatic characteristics of the grapes. Aging takes place in steel tanks, on yeasts, creating a wine that preserves its freshness and complexity. AFF Bianco is ready for the market after 3 months in the bottle.
Sensory Characteristics
Color: The wine shows an intense straw yellow color, capturing the eye with its brightness. Nose: The intense aromatic bouquet turns to notes of sage and exotic fruit, offering an enveloping olfactory experience. Taste: In the mouth, AFF White Fendi reveals itself to be complex, mineral, full-bodied and dynamic. The acidic aftertaste enhances the aromatic quality, creating a harmonious symphony of flavors.

Il Sagrantino
We cannot talk about Umbria and Montefalco, today, without mentioning Sagrantino. A very ancient grape variety that produces red grapes with exceptional characteristics both for long aging wines and for passito wines.
Marco Caprai believed in the great richness of this tradition and has recovered it in a modern key, adopting the most innovative methods of production and business management. Thanks to continuous research and experimentation we work to offer to the public powerful, elegant wines with great personality and typicality.

Our cellar, modern and functional, was completely renovated in 1997 and today presents inside: A vinification and storage department where there are stainless steel tanks for fermentation and storage of wines, equipped with devices for temperature regulation and automation of the pumping-over of red wines during fermentation.
