Buscaia Malvasia
WITHOUT ADDED SULPHITES
The wine:
From white grapes Malvasia and Malvasia di Candia. white wine varietal from an early definition of the flowers, lavender and hawthorn, which features but ‘the exact definition of mineral soil and the scent is enriched with salty tones and clay in the sun.
In the mouth it is delicate and light up the path of a sapidity ‘lymphatic which makes it perfect on delicate dishes from which plants together eggs, white meat and fish.
White wine with a delicate color obtained by two different kinds of Malvasia Bianca Lunga from the tight cluster and thick skin and that of Candia with loose bunch, berry large and delicate.
Both are harvested in early October and are vinified in white in a stainless dining area where free-temperature ferment with yeast of the grapes for 10 days; the wine undergoes the first racking with the February moon.
A further transfer to the end of March to prepare the wine to be bottled in early April.
It does not add sulfur in any phase of the process and even the final bottling.
In the vineyard they follow principles of absolute respect for nature (use of sulfur and copper), and only rarely enriches the soil with tertilizer derived from animals of the company.
