The Pinot Nero from Castello della Sala Antinori is the supreme expression of a refined red wine. After meticulous destemming and a gentle pressing, the grapes are transferred to small, cone-shaped stainless steel tanks. Here, cold maceration for about 3 days precedes the alcoholic fermentation, which takes place at a controlled temperature of 26°C for approximately one week. Subsequently, the wine completes malolactic fermentation and continues maturation in 228-liter containers for several months. The Pinot Nero della Sala further refines in the historic cellars of the castle before reaching the market.
