Classification: Metodo Classico (Traditional Method)
Varieties: Pinot Nero and Chardonnay
Vineyard: In the comune of Santo Stefano Belbo/Calosso (250-360 m.a.s.l.)
Winemaking: After the fermentation of both grape varieties, the wine ages in old wood for around 6 months, with weekly bâtonnage. Unfiltered and unclarified.
Aging: 24 months sur lies in the bottle
Yield: c. 70 hl/ha
Grape harvest: Last ten days of August
Tasting notes: Delicate and persistent perlage, bright straw-yellow colour with exceptional golden highlights. Intense bouquet, with notes of brioche and vanilla. It expresses itself with strength and equilibrium on the palate, with an extraordinary freshness.
Pairings: Ideal as an aperitif, it makes an excellent accompaniment to seafood, fish dishes and white meat.
