Manual selection of the best grapes in 15 kg boxes. Grapes chosen from a special vineyard that features the best exposure and adaptation to the location.
On arrival in the winery the grapes were de-stemmed and lightly pressed to avoid tearing the skins, placed for fermentation after inoculation with selected yeasts into steel vats with cooling system and automatic pumping over system.
Pumping over started after reaching alcohol vol% such as to extract a good amount of tannins so that these bind to the colouring substance and stabilise it over time.
Alcoholic fermentation of about 18 days, while contact with skins lasted for a further 12 days.
After separation from the skins, the wine underwent malolactic fermentation in steel at controlled temperature.
Finally, the wine was racked and aged in barriques for 18 months and no less than 10 years in the bottle.
Deep, intense ruby colour, the nose detects hints of soft fruit, red fruit jams, spices and menthol. The palate is elegant despite an imposing structure and
typical tannin of the vine.
To age for 20 years.
Recommended serving temperature is 20 degrees after accurate
breathing in a decanter.
