Grapes: 95% carricante, 5% catarratto
Production area: vineyards on the northern slope of Etna, volcanic soil, stony, dry, draining and rich in minarali. Contrada Calderara, municipality of Randazzo, 650 meters above sea level.
Vineyards: espalier with high plant density.
Yield per hectare: 50 quintals
Vinification: soft pressing of the grapes, fermentation at controlled temperature.
Colour: Straw yellow with greenish reflections
Bouquet: delicate and elegant, with notes of broom and hawthorn; in the final green apple and yellow fruit
Taste: fresh and very mineral, pleasantly sour
Serving suggestion: white meat, fish and shellfish, cheeses Mollee semi mature, very good to accompany cheese more determined and intense; battered vegetables, pasta with fish or vegetables, broth both vegetable and meat.
Serving temperature: 12 degrees C.
Alcohol content: 12.5 to 13% vol.
