Description: Vernaccia di Cannara DOC is a very old passito wine, produced with Cornetta grapes, a very rare and tannic native black berry variety. After 3 months of drying on looms locally called "camorcanne", the acidity and tannins typical of the variety are balanced by soft sugars, in an extraordinary and slightly spicy combination of aromas of blackberry, black currant and violet.

Varieties: Uva Cornetta (85%), Sagrantino (5%), Merlot (5%), Montepulciano (5%)

Harvest period: mid-October

Harvest technique: exclusively by hand

Withering: the grapes placed on loaves are dried for 2-3 months at a constant temperature (15 °)

Yield in wine: 25% (every quintal of grapes produces about 25 liters of raisin wine)

Fermentation: in vat for 20 days at controlled temperature

Aging: in steel for 4 months

Alcohol content: 15.5%

Residual sugar: 13-16% (depending on the year)

Notes: Unpasteurized or filtered wine

Tasting: Red, violet-colored wine, with rich aromas and flavors of red, black and violet fruit, with strong tannins, perfectly balanced by acidity and sweetness, which leave the mouth dry and clean. Persistent and pleasantly fruity aftertaste.

Tasting temperature: can be drunk cold (10 °) or at room temperature (18-20 °)

Pairings: traditionally accompanies the typical Umbrian Easter cake with new cured meats; remarkable with aged cheeses, dry pastries, panettone, Easter dove, ice cream, nougat and desserts. Unforgettable is the union with the sweets of the Umbrian regional tradition, such as the Spoleto rockata, the brustengolo perugino, the ciaramicola, the torcolo of San Costanzo. Surprising with chocolate.
