Is about a wine which refermentate with sour cherries, with sucrose added as a sweetener, but which, even only partially, take part in the refermentation process. Nothing else is added in this refermentation process (no yeasts, no additives, etc...).
The wine used came from Sangiovese’s grapes (for the 60%) and from Montepulciano’s grapes (for the 40%), undermined in the month of October of the previous year.
The relation with which the three Visner’s components get into the composition is the following: 1kg of sugar - 2kgs of sour cherries – 2.5 lts of wine. We obtain 4.2 litres of product from these quantities.
At the end of the month of June, when the sour cherries come to ripe, the wine that has been produced in the previous year is sugar-coated according to the relation abovementioned. Minced sour cherries are added to that edulcorated wine, with the 10% of the stone shattered.
The obtained mixture is refermentated at the temperature of approximately 20-25 °C for some months, being careful to do not disperse the aromatic substances of the product in the air, and to do not oxidise the product. At the end of the refermentative process, with normal oenological techniques, the separation of the solid part (pressed) from the liquid part shall be made. The VISNER is then left to rest in steel tanks for the subsequent decantation.
Subsequently, before bottling, shall take place the adjustment of the product with some sugar if necessary and the filtration of the product.
VISNER is a typical peasant product produced in the historical area between the municipalities of Cantiano, Cagli, Pergola and Jesi: this zone coincides with the land where the collection of the sour cherries happen.
Intense ruby red colour, significant and persistent sour cherry scent, soft and full-bodied flavour, sweet and flavoured with the right balance. Delicious ‘nectar’ suitable after lunch or for meditation, it matches beautifully with dry pastries, with fruit pies or with the local bundt cake. It can be consumed either young or aged. It has to be served at the temperature of approximately 12°C.
Some grassroots traditions defines the VISNER the courtship’s elixir, because it can catch woman’s taste buds thanks to his particular fullness and freshness. It can be defined a ‘patrimonial treasure to protect’ for the limited produced quantity.
