Vinification:

The journey to crafting this exceptional wine begins with the careful selection of the finest grape clusters. Following a brief cold maceration on the skins, the grape must is transferred to large Slavonian oak barrels.

Here, natural fermentation commences, thanks to the action of indigenous yeasts present in the must. During this process, the wine also undergoes malolactic fermentation entirely naturally. Subsequently, the wine matures on its lees for approximately 7 months, allowing its aromas and flavors to evolve harmoniously. This maturation period contributes to the wine’s distinctive complexity and structure. Prior to bottling, the wine is gently decanted. It’s worth noting that bottling occurs without any filtration, preserving the wine’s vitality and authenticity, ensuring that each sip is a genuine sensory experience. Any sediment present in the bottle is a testament to this production choice.

Aging:

Following bottling, the wine continues to refine in our cellar for a minimum of 6 months. During this time, the wine continues to develop its unique characteristics and perfect itself. This critical period allows the wine to reach its maximum expression of aromas and flavors. Only when it has attained the right maturity and complexity is it deemed ready for market introduction. This cellar aging process guarantees that each bottle is an authentic representation of our commitment to delivering the highest quality to our customers.
