Colle di Rocco Passito Bianco is a fine wine made from ancient vineyards of white varieties, such as Trebbiano, Malvasia from Latium and Tuscany and Grechetto. The grapes are harvested by hand and left to dry on mats for three months before pressing.
Suggested pairings: Perfect with aged cheeses, liver pâté, lamb and spicy white meats, dry pastries, spoon desserts, ice cream, nougat, pandoro, dried fruit, Easter dove, etc.
Serving temperature: can be served chilled at 10°C, but if preferred at a room temperature of 20°C.

Description:
Passito Bianco Colle di Rocco is a precious wine crafted from ancient vineyards of white grape varieties such as Trebbiano, Malvasia from Lazio and Tuscany, and Grechetto. Handpicked grapes are left to dry on racks for three months before pressing. The must ferments at a constant temperature (15°C) and matures for 12 months in stainless steel barrels, preserving its fruity aromas and primary flavors. Tasting Notes:
Passito Bianco Colle di Rocco displays an amber color with golden reflections that tend towards coppery hues over time. The aroma is warm and enveloping, fruity, while on the palate it is sweet yet balanced by acidity, with flavors of dried and candied fruit. The finish is powerful and lingering.
Recommended Serving Temperature:
Serve chilled at 10°C or at room temperature at 20°C.
