“LE CIMATE” is situated in one of the most suggestive locations at the heart of Umbria – Montefalco.
The cantina can be found in the middle of 28 hectares of land that were purchased by the Bartoloni family in 1993 from the Diocese of Spoleto. This site includes the property where the Curate of Casale resided.
The family has specialized in agriculture since 1800 and owns a total of 184 hectares of land, of which 108 hectares are used for grain produce, 15 hectares for the hazelnut ,15 hectares for DOP olive groves and 23 hectares cultivate DOCG vines.
Situated on a splendid hill top with a 360 degree panorama view of on one side the Monti Martani mountains and on the other side the city of Montefalco, the cantina ‘Le Cimate’, surrounded by it’s suggestive vines, has been constructed on the site of an existing building and takes the name of the actual location.
Included in the land is an area where it is said that Saint Clare of the Cross (Santa Chiara della Croce), who lived around the turn of the 12th century, used to shepherd her sheep. In those times there was a water spring that is now long gone where she used to lead her flock to drink whilst she prayed.
This area which covers approximately 5 hectares now harvests 4 different types of high quality white grape vines.
Today the area of Montefalco is above all famous for the extraordinary wines that it produces such as the Montefalco Sagrantino Passito DOCG, a sweet desert wine with a high alcohol content from which the Montefalco Sagrantino dry wine derives with its very well sustained tannins and the Montefalco Rosso DOC wine which is a blend of sagrantino and other grapes local to the area.
In addition to these wines the cantina “Le Cimate” produces various high quality white wines to complete the range.
Three generations of the Bartoloni family have contributed to the construction of the cantina; grandfather Paolo who has dedicated his life to agriculture and moreover has always specialised in vine growing (he was president of the local community cantina ‘ColliSpoletini’ for more than 20 years); his son Giovanni who had the courage to believe in the investment necessary to realise one of the most modern cellar in the area; and grandson Paolo who with his degree in agricultural studies will dedicate the rest of his life to wine production.
Le Cimate Winery:
To complete the complex a characteristic ‘tasting’ area has been constructed for events with wine and oil tasting which can be organised directly by the cantina, having the possibility to cater for 120 guests and able to offer typical local culinary produce from the area.
These events will help promote both wine products and extra virgin olive oil which isalso produced by the Bartoloni family. A total quantity of 10,000 bottles per year are processed using excellent trusted local olive mills which ensure a superior quality to an extent that many British and American tasters have exclaimed that it is a delight to the palate.
The olives are cultivated in the surrounding countryside areas of Castel Ritaldi, Giano dell’Umbria and Spoleto in ancient groves (in the area of Giano there is an Olive tree dating back to 1600) and also in modern groves on hilly terrain with excellent exposure and slopes to guarantee correct rain water drainage.In this way the olives are small, compact, sour to the taste and of a green colour with shades of gold tending to black.
The harvest is obviously carried out directly from the plant to guarantee the freshness of the product and the olives are cold ground (not above 20°C) within 10 hours of the harvest to prevent any mould or other impurities.
The product stands out because of its aroma, colour and it’s insignificant level of acidity. No additives or other products are added to the oil which could alter the visual aspect or aroma of the oil.
The different types of olives are selected and blended in expert measures to ensure the quality.
