Arquata Umbria Rosso IGT is an internationally styled wine, affectionately known as the “vino matto” by Alvaro Palini, the historic cellar master of the winery. It is crafted from old vines of Merlot, Cabernet, and Barbera. With its almost impenetrable ruby red color, this wine is complex and intricate. On the palate, it reveals notes of jammy berries, cocoa, spices, ink, and a long balsamic trail. It is full-bodied and structured, with dense tannins, yet lively freshness thanks to the inclusion of Barbera in the blend. This wine has excellent persistence and reaches its peak expression with aging. It ages for 30 months in oak barrels and at least one year in the bottle. It pairs effortlessly with grilled meats, semi-hard cheeses, and game dishes.
Harvest: Manual harvesting takes place from the beginning to the end of October, depending on the varying ripening times of the grape varieties.
Winemaking: The grapes are destemmed and crushed, followed by fermentation and maceration in stainless steel tanks at a controlled temperature of 28°C for approximately 20 days, with daily punch-downs and pump-overs. The post-fermentation maceration lasts 3-4 days. The wine is then aged in barriques and tonneaux for 24 months and further aged in the bottle for 24 months.
