Artisanal Winemaking and Aging
Upon arrival at the cellar, the grapes undergo a delicate treatment: destemmed and gently pressed before being transferred to stainless steel tanks, where alcoholic fermentation takes place. The maceration lasts an average of twelve days at a temperature of 28 °C. After malolactic fermentation, the wine is transferred to oak barrels ranging from 30 to 80 hectoliters, initiating the wood aging process.
After two years of maturation in the barrel, Pian delle Vigne leaves the large barrel to embark on an extended bottle aging journey.
