The wine:
Obtained from an occasional over-ripening of the grapes, the wine has revealed a unique character where mature notes are the basis of its old charm.
The aromas are of dried fruits and dried flowers and the taste is strong and dry. The legacy of flavor is the one that leaves a deep imprint in the memory … return, cloves, dried plums and salt.
Wine that meets the cooked long fiber of the meat and the wild force of medium-aged sheep cheese.
Red wine made from Sangiovese grapes grown in the hills and cultivated in rows as in the Umbrian rural tradition. The harvest was delayed leaving them simmer gently grapes in the vineyard. They just follow the cycles of the moon phases for the work in the vineyard and in the cellar, where there is inspired by principles of absolute naturalness. The land is only occasionally aided with proceeds manure from animals of the company. Do not add yeast than those derived from grapes and the wine cellar. The farm use steel containers, fiberglass and cement vitrified.
