VINIFICATION AND REFINING
Harvest Hand picked in small cases from August 17th to August 19th 2011, depending on the grape variety.
Production 7,500 kg of grapes per hectare.
Vinification The grapes are first cooled and then pressed very softly. The grapes yield in must is 50%.
Fermentation in stainless steel vats at 16°-18°C (61°-64°F) for 16 days.
Tirage and Dégorgement
The bottling occurred in May 2012. The sparkle development and the dégorgement took place in our underground caves at ideal temperature, with a 60-month period between the two processes.
