The name Sagrantino derives from the Latin, “Sacer”, a holy wine destined for consumption during the Christian festivals. The Passito, a sweet dessert wine, is the traditional version of
Sagrantino in Montefalco.Grape variety: 100% Sagrantino.
First vintage: 1979.
Yield per hectare: 20 hL per hectare / 1.4 kg of fresh grapes per plant.
Harvest: Grapes are handpicked in the second week of October and placed in single layers in crates. Bunches that have received the most sun are selected as they are more suitable for this wine. The grapes are dried naturally on cane trellises for 75-90 days.
Vinification: By gravity. Maceration and fermentation in contact with the skins for 8 days at a temperatures of 25°C. Malolactic fermentation takes place. The wine clarifies spontaneously with no need for filtration.
Ageing: In 10 hL oak barrels for 15 months. Assemblage and clarification occurs in cement vats for 3 months. Bottle ageing for 12 months.
Tasting notes: Rich ruby tending towards garnet in colour. The wine resonates with blackberry, blackcurrant and raspberry jam and is both elegant and spicy. The taste is very delicate, showing a lovely balance of sweetness and a long length with persistence of red fruit.
